After flashing tune it says to drive gently for it to lean values
What are these values to learn?
How long for it to learn new values?

Any chance of allowing users the use of the 'beta' tunes to revive this vehicle with your software?

I understand you don't have the diesel in the us but this vehicle is now long forgotten. And if I'm not mistaken the tunes are basically a copy and paste from Mazda tables.

Every system has default calibrations. However, these things may have variations from the defaults which are more like a point of reference rather than a target.
By example air flow. The same volume of air at a given temperature and atmospheric pressure will have a different weight (actual mass) at a different temperature and/or at a different barometric pressure. The management software will adapt for these deviations, will learn the baseline of various sensors, and so on.

So once you flash a tune it's recommended to let the car idle 2-3 minutes, and then drive it normally (not like a granny, but not rally style either) 10-15 minutes.
