My logs are showing my max relative throttle position to be 75% and I see that in the Throttle Control tables seem to show 80% as the max, is this normal? Also, I see that I can't increase the that number above 80% is there a reason for that? Maybe I'm just not understanding this correctly but it seems like the throttle still isn't fully opening.

Max actual throttle position on our cars is around 76%. Throttle tables are limited to 80%, because there is no point in trying to set any higher value.
Judging by your logs, your throttle is fully open.
