Your MAF signal is going nuts in different areas. Does the CPE intake have an air straighter close to the MAF sensor?

No, absolutely nothing to do with the engine bay heat, which you do not have in excess BTW. And even if you did, at low loads it doesn't matter, it's actually a small amount of free energy that you push into the engine.
At this stage I'd get the VVT diagnosed and eventually serviced, most likely it rattles in certain situations and the knock sensor is picking it up.

Thank you so much, I'll check the timming this weekend. Do you recommend any timming kit in case I need to replace it? There are many kits on eBay and other sellers, but I don't want to have any issues with the quality.

Also, what type of oil engine do you recommend?

Do not use an ebay timing kit. Get an OEM kit from reputable vendors: corksport, graveyard, edge, SP63, and so on. Those 150$ kits from ebay will work ok on 2.3NA engines but not on ours (they will actually work but not for long, and not properly, and you do not have all the necessary parts such as the diamond washers which are a must).
